In the Kapampangan version of pinoy tamales, a mixture of ground rice, chicken, gound peanuts, and egg is wrapped in a banana leaf, and then steamed. Boots Ocampo of Manilenians restaurant in Daly City tells us why this Filipino delicacy has grown so popular.

I AM LOOKING FOR A RECIPE FOR FILIPINO TAMALES, BUT I THINK I WILL MAKE MY OWN VARIATION. TAMALES WITH THE SWEET RICE AND ADOBO BABOY ON TOP, PERHAPS WITH SLICE OF ADOBO BOILED EGG. IS THERE ALREADY A RECIPE FOR THIS? I WOULD LOVE SOME TIPS OR A GUIDE THAT I CAN FOLLOW.
